Simple Vanilla Cake Recipe

Ingredients:

  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 and 1/2 teaspoons vanilla extract
  • 1 and 1/2 cups (190g) all-purpose flour
  • 1 and 3/4 teaspoons baking powder
  • 1/2 cup (120ml) milk

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round pan or line it with parchment paper.
  2. Mix Sugar and Butter: In a medium bowl, cream together the sugar and butter until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. Combine Dry Ingredients: Combine the flour and baking powder, add to the creamed mixture, and mix well.
  5. Add Milk: Finally, stir in the milk until the batter is smooth. Pour or spoon the batter into the prepared pan.
  6. Bake: Bake for 30 to 40 minutes in the preheated oven. The cake is done when it springs back to the touch or a toothpick inserted into the center comes out clean.
  7. Cool: Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Optional Frosting

Simple Buttercream Frosting:

  • 1/2 cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 1 and 1/2 teaspoons vanilla extract
  • 2 tablespoons (30ml) milk
  1. Cream Butter: In a medium bowl, cream the butter until smooth.
  2. Add Sugar: Gradually add the powdered sugar, beating well after each addition.
  3. Add Vanilla and Milk: Stir in the vanilla extract and milk, beating until light and fluffy.
  4. Frost Cake: Spread the frosting over the cooled cake.
